Dumb question, but did you handle the rotors with dirty hands while doing the bearings? I have seen people do brake work in a hurry, and then forget to make sure the contact surfaces are 100% free of oily handprints.
The pads I would have given a quick spray with brake cleaner also in case they had some contamination on them.

Some of the O'reilly stores here still do rotor and drum surfacing also.
