m thinking your V baffle isn't going to help much when the fuel level is much below a 1/2 a tank (which I suspect most of your issue is at) with out it being at least partially connected to the bottom of the tank.
As stated, the modern fuel injection tanks have a semi circular baffle within about an inch of the fuel pickup, around about 3/4 of the diameter of the pickup. The walled side would be around the side most likely to allow the pickup to become uncovered. That baffle would only need to be around 1" of the bottom of the tank. you want it to slow down the movement of about a 1/4 gallon of gas around the pump pickup.

Your V baffle would be very helpful for keeping the fuel from sloshing forward or backward during fast takeoff or fast braking, but I don't believe it will help your momentary fuel starvation when the fuel level is below 1/2 a tank.
