I know I'm an idiot (sorry), but how are we supposed to know if a particular oil is certified for MS-12633, or only meets MS-12633? Is there a difference?

It is just a ploy to get you to buy the Pennzoil. FCA is in bed with them and came up with this new spec to sell more high dollar oil.
The simple fact is, they can not require you to use any specific oil unless they provide it free of charge. It is against the law. The recommendation is 0w-40 synthetic in the manual. If you use this, regardless of brand or MS spec number, you are still covered under the warranty.
