As Monte pointed out, a launch is not a single progressive application of power through the tires, but a series of connected and related events where the chassis and tires recover and re-hook. The data logger shows more info of what went wrong, and I don't think all G meters respond quickly enough to pick up transients.
I agree, as Al says there is no blanket answer, only a trend, and best used to compare A & B in the same car, same day.
