The biggest trick is to use more aggressive paper & no pressure... Let the paper do the cutting.. After you've cut it flat use progressively finer paper changing the direction your sanding so the finer paper cuts the previous grit scratches out... Trying to get a flexy panel truly flat with finer paper is virtually impossible because using pressure flexes the sheet metal...
