But, that said, stroke just lowers the power band. In most cases we would not want to turn 10,000 RPM so we elect to go with more stroke and turn 8,500.

I like strokers easier to choose converters and easier to maintain compared to a short stroker making the same power.

I agree. Big Blocks with similar head flow keep getting faster with more stroke, all the way to 512 cubes and the same airflow you have.
