We smoked our 340 AGAIN !! thinking about going to a 360 block ( alot easier to find ) what is the max overbore that would be safe for a 360 block ??

No personal experience but according to Herb McCandless, an early 360 used the same same cylinder cores as a 340 so if that is true, .080" to .100". It has to be from the first year of production IIRC so that would be 71? A sonic check would confirm this.

every block is different - especially used ones - Sonic check ( ~ $75) to determine the actual amount you can overbore the block.
