If you wan't to find the limit of your cylinder heads, contact Jeff from Modern cylinder heads. This is right up his alley.

From what I've seen, IF the port is revised to use the bigger valve it'll probably be worth about 5 cfm over the standard 2.14". On a small-port head like a Performer RPM, it's not like the valve size is corking up the intake runner.

I ported on a set of RPM heads and ran a 2.250 valve with max wedge port size. It flowed an unsteady 345@ .750". This was preliminary testing and I know I could have steadied things up, but I had jobs that were paying that required my attention and my (ex) boss wasn't all that good at paying me anyway.
Point being, if you have a large enough bore to take advantage of it and you open up the port, the larger valve will help. Otherwise it can actually impede airflow because the chamber and cylinder needs to be far enough away that air can get around the valve.
