Just curious if these mono leafs tend to settle after a while? I bought -1 leafs but they appear to still be a tad too high for my liking and just wondered if having weight on them may let them drop down a bit after sitting for a while with the weight on them?

I doubt it. After about 8 years of use, my passenger's side spring lost 3/16" of arch. The driver's side was still where it was new.
These are stock height monoleaf springs on an E body.

Our's seemed high when we got them and I was about ready to send them back (Calvert will swap them once for free; you pay shipping). I waited (about a year) and they did settle about an inch, so now I'm keeping them.
