I know there are a lot of vendors out there so I am looking for some recommendations for a screw/bolt kit for a 71 cuda. I am looking for original looking parts and as large a kit as possible (the more the better).

I will be buying an interior and exterior kit.

Are the AMK kits correct hardware or just a kit that was put together to fill the need?

I am sorry I do not know.
That is why I said to check them out.
A phone call may help.

Avoid anything from Penstar. Incorrect parts and horrible to deal with.

I'm a dealer for AMK. As are a few others including R/T Specialties, E-Body Ed.

I will say there is no such thing as a 'complete' correct screw bolt kit avail today. Every bolt or fastener just isn't avail at this time. Although AMK gets the clostest to OE as anything avail today. But I believe you'll need fasteners from several different sources to get them all.
IMO the first contact should be to Tom Race at R/T Specialties. He is a dealer for numerous fastener suppliers (far beyond myself) and will be the best to get the closest to complete coverage.
