I have a 70 340 with stock J heads, stock 340 hi po manifolds, stock compression, stock cam, stock 4bbl manifold in my 69 Formula S Cuda. I have a box stock Holley 1850S (600 cfm) on top, with 67 primary jets.

The gears are 3.23s. Is the secondary jetting too lean and requires addition of a jet plate, or do you think that this is sufficient for the motor?

To me, 750 seems too large for a 3.23 geared stock internal motor. Maybe a 650 Avenger or Edelbrock.

if it is just a daily driver...a 600 holley will be fine...especially with 3.23 gears..

if the car has more gearing, converter and cam...yes a 750 holley is faster...

besides you have it already....

I had a Holley 600 that was modded to a 650 by Promax. When my motor had about the same specs as yours, I ran 68-70 front jets and 74-76 rear jets.
What I found was the secondary metering plate sure made it easy to dial in the WOT.
I am not sure that you will know until you try it and play with the secondary jetting. If you do not have any pinging at WOT, then it may only help a little.

I know from experience that a stockish 340 with the HP manifolds ran very well with the 650 vac/second carb with 3.55's and 26" tires. The Edy 600 that I had was not as responsive with this combo. I think that your 600 would be fine for a stock 340 for cruising but as soon as you want some more performance, then stepping up on the converter will be a big difference in performance.
