I just completed my first 440 build with the help of a Buick Big Block engine builder.

During engine priming he noticed you had to rotate the crank to get any oiling. When the oil started to flow, it was like a waterfall out of the rocker shaft which really seemed excessive!

Is this common? Should I have used oil restrictors? I have a high volume oil pump, same one most people use on ~450-500hp engine build.

Yes it's common. The facotry oiling for the heads is timed off the # 4 cam bearing. They don't get constant oiling so to prime everything properly you need to ratate the engine.

Not out of the ends I hope?
Otherwise check the end plugs.
