Definately need the shroud and you should be running a 16 lbs. cap. The obvious, make sure you have all of the air out of the system. Also are you using a clutch fan?

Mine started heating up and wouldn't go back down when moving. Bypassed heater core and that took care of it.

I think everybody pretty well covered the bases on this one.
I will take an educated guess that if all checks out on the listed items, that Robert has it with casting sand plugging the radiator.
I want my fair share

Radiator partly plugged
I had similar problems with my 95 truck and replaced the rad, problem solved.

The 383 I have never has cooled the best but im not running a fan shroud and really need a bigger radiator. For the past few years it would always run around 180-190 until I was in traffic.. then it would slowly creep up to 200 or slightly above.. but cool right back down when I would start moving. Well a few weeks ago I noticed my gauge showed around 210 degrees and when the car started moving it wouldnt cool back down. So I replaced thermostat because it was stuck open. Now the car heats up to around 180... cools back down... then goes back to 180 again. It will then slowly keep getting hotter until about 210. Yesterday I took it on a drive doing 75 mph and it over about half an hour it went from 180 to 210. When I slowed the car down to around 55 it dropped to 200. Brought it home and it had plenty of coolant/water in it. But the hoses were swollen bad and I couldnt squeeze them a bit. I was thinking my radiator cap may be bad but its very easy to push it in as its just a 7 lb one. Im going to replace the cap and hoses today. But any ideas what else could be the problem here?
Check the radiator core (grille side) for bugs, road grime, grit/grime etc. If a/c car, check condenser. Flush system WELL. Keep the 16 psi cap, but have system checked for leaks with new cap!! Replace hoses, they may be in a weaked states due to ballooning. By all means, get a shroud and a viscuous fan clutch (MP Performance), it will help tremendously. And check your timing and timing slack at the distributor. It may be out of time (overadvanced/retarded) with the cam used, IF cam is NOT factory type!! A leaned out carb (top end/slightly low fuel pressure/level) may be of problem too.
