Am I right in thinking that the advertised rpm range of big block camshaft would be lower if the cam was used in a 500 cubic inch stroker? If so, by how much would it be lower? Does the same apply for the advertised RPM range of an intake?

Yes on the cam and somewhat on the intake would be my guess
