Is it a good idea to also install a baffle on the
breather side of the valve covers? Obviously the
PCV side will suck oil, but the breather side is almost always a draw in correct?

If you have them and have the clearence, go ahead and use them. Keeps oil from slashing up onto
breather when driving and stopping.
Keeps the breather cleaner.

The breather is only a draw at idle and light throttle. When you're really accelerating the PCV valve is now useless, no vacuum to operate it. Now the breather is venting the blow-by. Make sure there are baffles on both or you'll quickly oil soak the breather making it less effective, ugly and an oil dripper on your engine.
