Honestly, I wouldn't restore it either. Clean some of the mud off, maybe get the rear back to normal ride height, and display it more or less as-is. It's a really awesome piece of history in it's current condition. However, my vote would be to do the bare minimum to get it running mechanically, and then do one monster of a burnout.

I'd totally wash the car, completely dry it out and leave it as is. In a climate controlled museum it will remain intact forever.
