Can anyone give me advice on what to spray/ restore on an original black dash pad. Some kind of vinyl paint that still shows grain? I thinks herbs black interior paint is too flat for a dash pad.

I used SEM Landau Black, formulated for interior surfaces. Really nice stuff.

up I've had real good luck with their products on areas that don't see constant use like seats beer

I've used SEM on door cards, dash pads, and armrests; with proper prep, it's lasted decades so far.
The sheen has always been good as well.

I think you want something specifically for vinyl: tends to be thinner. Paints tend to be thicker. Because you're concerned upon retaining the grain.
But I guess a lighter coat of paint will suffice.
