I've never messed with a "crate" hemi motor like yours but all the stock and SS Hemi motors on gasoline liked between 34 and 36 degrees all in, that is around 15 motors total so take that what it is worth

I've never messed with a "carte" It's not moors, it's..... I was wondering if it was like ala carte? Like a hemi on your plate with nothing else. (not to be confused with ala mode, a hemi with ice cream on top) So much to learn
