Lots of after market low back buckets out there. For example http://procarbyscat.com/seatsYou'll have to make you own adapter though

Pretty sure there was a law about head rests that went into effect in the late 60's. So any boneyard pickings will likely be seriously in need of redoing.

When I built my 57 Plymouth I was looking at 60s era Thunderbird seats (which I still think would have worked well). In the process I came across a 67 Chrysler 300 4 door with buckets and a folding buddy seat. As it was a 4 door the drivers' seat didn't fold forward but that was remedied by simply removing a bolt on bracket in the seat that the factory used to prevent it from folding. The drivers' seat is 4 way power and the passenger seat reclines.
