Best/easiest way to remove. Also is it better to "bolt" on headers or put new studs and "nut" them on??

Simple double nutting the studs should work.

I prefer using studs for the headers if space permits. Then you don't contend with draining antifreeze when you remove headers. Use thread sealant on the studs.
