I haven;t driven my 70 challenger in years....I took it for a ride and the speedo is making a loud high pitch noise. The needle is going up to around 30 and swinging back and forth. I unplugged it so it wouldn't keep happening. Now what?

The cable is binding up. You could remove it and lubricate, re-install while taking care to keep bends as gentle as possible, and/or replace the cable.

The cable is spinning when I take it out and drive. I think its the speedometer itself. Do these usually go?

Just because the cable is spinning doesn't mean it's not binding up some. Pull the cable core and clean and lube it. Hook it back up and see what's happening.
