How would you fix a wiring harness that had the ammeter terminals cut off two inches from the ammeter terminals?
Solder on new ends? Crimp new ends? Add new wires to the terminal plug?

Solder on new ends? Add new wires to the terminal plug? No big deal either way. solder on new ring terminals If you have 2 quality ones handy, if not then solder in 2 lengths of wire to connect the OE insulated ring terminals with pigtails (sounds like they're still there) to the red and black wires. clean the wires/terminals with brake kleen before soldering as you need good connections there. #1 caveat, always pull a batt cable before doing ANY electrical procedures

FWIW - I always stagger my soldering joints to reduce the chance that they would ever contact each other (zoom in on photo). I double heat-shrink each joint as well. IMG_5975 by R M, on Flickr

The proper way is to use a non insulated butt terminal and crimp it, followed by soldering both ends, then heat shrink tube it. You never want to rely upon a solder joint to hold a two wires together, especially wires running voltage and amperage between the alternator and battery. The heat generated in a short situation is more than enough to melt that solder joint and shrink tube. Now you e got a bare hot wire under your dash. Wheeee! Do the same with the end terminals. Bare terminal, crimp, solder, shrink tube.
