http://www.tirerack.com/tires/surveyresults/surveydisplay.jsp?type=ORATMy pick for a 3/4 ton truck: 265-75-16 Load Range D.
It's a decent size, IMHO rides better than a 245. You don't need a Load Range E tire except if you're always carrying a camper or if it has the 1100 lb Cummins holding down the nose.
I have put thousands of highway miles on the predecessor to the Michelin on that list and it's what I'd choose for me. Second choice would be the BFG Radial All-Terrain. It's a very good all-around tire and I have used several of them.
None of the tires on that list will kill you with noise. Mud-terrain tires will, plus their taller more widely spaced lugs reduce braking and cornering ability on anything but mud.
My last set of tires were takeoffs from an early 2000s CTD, the alloy 5-spokes with the Michelin Load Range E tire. They needed a lot of work to get to fit because they have more positive offset. This means the center is pushed out towards the outside edge. The wheel ran into parts behind it and required grinding and spacers to get to fit. The Load Range E tires ride more like concrete blocks when unloaded. But they were cheap and nearly new.
My Michelins lasted more than 80K miles under a 3/4 ton Suburban.
