Are the engines removed the traditional way from above or does the cab have to come off?
The 5.7 in my 2007 sits halfway under the base of the windshield. There isn't a whole lot of room above the throttle body either. Regarding "pick points" where do you lift? Aren't these engines equipped with plastic/composite intake manifolds? I can't imagine that you'd be able to attach anything to that.
I'm at 214,000 miles and I'm trying to plan ahead. I will probably rebuild a core and do the swap when the original conks out.

I was a Jeep/Chrysler/Dodge tech until 2012. We never took the cab off?? Not even the hood.

Take the radiator and shroud out, you're gonna drain the coolant anyway. Take off the accessories too, that frees up a lot of room.

Take the intake off and attach a chain to the heads. There's a couple places in the front or back of the heads to attach bolts to. Just make sure to take the slack out of the chain and put it diagonally across, should be OK. We used the intake bolt holes sometimes too.

Might want to look into a push rod holding fixture, you'll never get the valve train on correctly without it.

Yep what he said. Take the cross piece off the top of the core support area also. If you think this is fun try removing a Cummins in one of these trucks.
