I hear ya about needing three hands to access carb.
A side note; those screw in jet extensions have been tested and proven by some bad dogs to be a restriction especially in the 80-90`s jet ranges. Also, a jet doesn`t want to be at the end of a of an extension but rather the extension AFTER the jet............also proven so I make 1" long 11/32 extensions out of hobby shop copper tubing then cut one end w/a tubing cutter and the other w/a cut-off wheel so the jet can slip inside but seal againtsed the block from the swedge from the tubing cutter. VERY stable wfo fuel curve..............try it!
