I am not 100% on the varnish yet. I was kind of thinking about using the clear spar varnish. This truck will be used and abused and I don't want to have to touch it up all of the time.

Very nice! One of these decades I'd like to replace the wood in my bed. At the least, I'd like to countersink the bolt/washer's that make it near impossible to slide anything all the way in

If you follow Horkey's finish process it's quite involved but holds up well.
