6.1 crank works in the 5.7,you can find those for $200 used in good condition. The reluctor is different for the crank sensor.
I have one for sale, but it needs to be turned down

How about a new 4.050 crank?About $800, I think Molner makes some with 2.00 rod journals so you can use SBC rods, shelf pistons. Granted, it is more expensive, but if the rods are cheaper (SBC Hbeams) it might soften the cost some. There are a number of stroker pistons out there for some good 5.7 combos. I found a 3.888 stroke crank at Lofgrens at a good price, plus I bought the rods out of his Drag Pac motor which will give me about a 6.3 Hemi. I am not sure if he has any left, though.

Depends how much power you want to make, but the 6.1L crank is a good choice. I've talked to a few high HP engine builders that are using them (HHP,BES,etc...). I told them that I wanted to make 1000hp and they told me no problem on a boosted 6.1L stock crank.
I'm just starting going down this road. 6.1L crank, 03~08 block/heads, stock rockers, stock non-MDS lifters, and there are some new non-mopar drag pack intakes being cast.
80mm turbo should be able to make 1000hp pretty easy/reliably.
