A friend of mine has a 76 D200 318/4speed (granny low)
Hes running what he thinks is the factory 190 or 192 thermostat.
On his aftermarket mechanical gauge, while towing on a hot and humid day, the truck was running around the 200-205 mark.
I told him that if memory serves correct that anything under 210 was still safe, and that at the 220 mark you needed to start watching close, anything much above 220 was time to shut down, slow down, or take other actions to cool down.
Did I give him correct advice?

220°F isn't really a problem if you have a pressure cap that'll handle that temp. A 16 psi cap will raise the boiling point to around 250-260°F.

When I drove my 91 dakota accross country back in 08 it ran a pretty steady 250 most of the 2000 mile drive with waaaaaaay too much weight in the bed (my tool box and a bunch of engine/trans parts) and a treighler that weighed about 5000 lbs hooked to the bumper right next to the stamp that says do not exceed #300 trailer weight (or something to that effect).
I am not causing global warming, I am just trying to hold off a impending Ice Age!
