I have a new Edelbrock 750 on a new engine. Did the cam break in and then throttled it back down but it wouldn't go below 1500 RPM. Funny thing is when you first start it up it idles fine. Give it a little gas and the RPM stays at about 1500. If I cover the air intake with my hands and choke it off a little it will idle down and stay at about 750 RPM but as soon as I give it some gas again it goes right back to about 1500 RPM. Throttle Linkage is not sticking, it is warm and the fast idle screw is not part of the equation, messed with the choke and it seems to be set correctly, checked for vacuum leaks and it doesn't seem to have any, mixture is close, any ideas?

What cam are you running? What is the vacuum @ idle? If the vacuum is low due to cam overlap spec, the Edelbrocks need some revisions to run right... They do have a mod kit available from Summit, Jegs... Just my $0.02...

Disconnect and plug the port going to the distributor just to see if the same thing happens.
In addition to this, I'd also suggest disconnecting the brake vacuum booster hose and plugging it to see what impact it has on idle. Power diaphragms can develop vacuum leaks that will manifest themselves as a high idle.

I had a chance to mess with it a little more. Figured I would see if the choke linkage was binding or the secondaries are hanging up. When I fired it off today, I heard a very faint whistle coming from under the hood. I guess my vacuum leak checks weren't as thorough as I thought. I did the carb cleaner trick and the engine bogs down when I spray around the passenger side of the intake. Shure didn't seem to do that the other day though.I retorqued with no change I just used the stamped steel valley pan with an aluminum intake and cast iron heads. Any other gasket suggestions?

The side composition gaskets with the blue borders around the ports. I'm sure it's a felpro item (printoseal?). EDIT In addition get a blue can of Permatex "high tack" gasket cement in the spray can "the red stuff". It goes on light/even & is extremely tacky & seals very well
