I put 8 quarts in my 8 quart Moroso smallblock oil pan on a fresh motor, but the stock (5 quart) dipstick shows the level a couple of quarts low yet.
Is this normaal? Is there a different dipstick I should be using?

Full level stays constant on the dipstick. It is the lower level that changes. did you also add the extended pick up tube?? If so you 'should' be fine, but personally I would fill to the add line.

Yep, got the deep pickup tube (even have an extra ), it will take at least 10 quarts to fill it if I go to the "full" line!

You don't need to fill it all the way. While extra capacity is helpful, a deep pan allows more oil than OEM, but keeps it further away from the crank and reduces windage, especially when its sloshing around. The deeper sump and baffles keep more oil around the pick-up.

I never run more than 5 qts in the race car.

I hear ya, I was only going to put 6 quarts in for break-in, but it wasn't even on the stick! Thats why I added the other two, but it's still about two short of hitting the line.
I may get a longer dipstick out of a truck, see if that works.
