I recently found that my factory guage was 35-40 degrees off. My mechanical gauge shows 190-215 degrees. My question is does this seem right? Still to high? The engine is 350-400 horse. I'm using a champion 22in. 3 core radiator with a 17in fan with shroud. Thanks for your help.

Are you using a new temp sending unit with you factory gauge? Try an old original unit. I've heard some of the units have the incorrect resistance.

I've got a 22 Champion in my 425-450 HP 416 stroker motor. And it's at 160-180. And it doesn't have a shroud yet. If it idles for quite a while the lack of front airflow will get it up to 200-220.
