If I took my 3/8" aftermarket fuel sending unit and cut off the float level, replaced it with an aftermarket unit that had a different Ohm reading, and put in an Autometer gauge on my dash, in theory, it should read correctly....right?

it should.
I have thought about that, and this

no moving parts.

but I would see if a modern equivelent worked so I didn't have to change the gauge.

0-90 Ohms most GM cars, 1965-up
73-10 Ohms pre-1989 Fords & most Chryslers
240-33.5 Ohms Industry standard, works on many popular cars
0-30 Ohms most pre-1965 GM cars
16-158 Ohms most '89-up Fords

thats for a fuel cell though....I am wanting to keep the factory fuel tank and use the factory sending unit just altering the level sensor to the updated one

I understand the whole unit is for a fuel cell, but the same concept applies. if it can be disassembled. and placed in a regular fuel tank bolted to the old sending unit, it would do the same job.

it can be ordered in any length and any ohm range.
so you can keep your old dash stock if you want.

otherwise your idea works fine, replacing the gauge and sending unit at the same time.

i did exactly this a few years ago. i will say that i didnt spend enpugh time working on my float, as my gauge isnt exactly right. in my a body, i have a 16 gallon tank. at empty, i only put in 12 gallons.
so yes, it can be done. mine was done with a pair of bolts, as that is what the sender was assembled with from autometer.
