If you mean doing the main body then the parts, fenders, hood, ect, seperate then it is OK. Not prefered but OK. I do all the street rods like that.

Only if your doing the "moparts" brush and roller paint job, otherwise hang and align all the panels on the car, some pre-jambed if you wish, and paint it like the factory did,.....correctly, and in one piece, otherwise your "project" can end up looking like this...

Because black is the easiest color to do that way, but most of the time you can tell if you look close. It's tough to get paint to flow the exact same way day to day most times because of conditions. There are many things that could be different day to day.
