Not putting words in anyones mouth, but I think the SB stroker AndyF is mentioning is for a road race application, and crisp throttle response is therefore highly valued, and since I am building an almost identical SB Stroker motor and application, I am leaning towards a 750? since we are usually traction limited and most passing takes pplace at the top end. 
Reality check, that half the population is smarter then 50% of the people and it's a constantly contested fact.
