For a street car I'd go with the 4.25 inch stroke crankshaft regardless of the block. The 400 is probably the best block to use followed by the 440 and then the 383. Any will work, but the 400 gives you a very nice combination of power and size. The 440 block might make it a little easier to find headers and intakes and stuff like that so if you have a good 440 block I'd use it.

500 inches with the 4.25 crank and a set of good aluminum heads will give you plenty of street power, even with a smallish street friendly cam. We build these engines all the time and depending on which heads and cam you pick you can see up to 600 ft-lbs of torque and between 500 to 600 hp.
