Thickness will depend on how the intake ports line up top and bottom. If you have some gasket material there you can measure it with some dial calipers to confirm thickness's and use it as a shim to check port alignment. Common thicknesses are .015", .031" and .062"
Or as stated if you have lots of feeler gauges you can put those in all four corners.

If you should happen to require more than .062" thick gaskets, yes, you can bond multiple gaskets together for your requirements.

Bonding gaskets together, we recommend 3M Super 90 spray adhesive. Follow directions on the can but in short spray one side of each gasket to be bonded, let set for about 3 minutes. Then carefully start at one end making sure they are lined up and work your way across the gasket pressing them together. You may want to use some sort of dowel to keep the gaskets separated until your ready to work that area, then remove dowels one at a time.
Be careful and work slow as this stuff bonds ON CONTACT and once stuck there is no turning back!
Once gaskets are together use some pipe (rolling pin) and roll over the gasket to complete the bond.

Published torque figures for the big block wedge is 40 lb ft.
