I wouldn't winter drive without the crossover but that's just me. The crossover heat helps with mpg and throttle response by boiling off fuel that's puddled on the floor of the intake or dropped out of suspension. This happens more when the air is colder. But you can try blocking it off and you will see the difference for yourself.
