another alternative, build the 318 like you plan (but I'd do a little more looking into the torque converter, look for a high stall, but tight converter), and then when you're feeling slow, toss a cetrifugal supercharger on it, boosting it by about 6-8psi...all of a sudden a 320hp/350 tq 318 will be putting out more like 450hp/480tq....
as far as gears, you could look into some 2.94's...they're not the easiest to find, but I think the best compromise gear for a non-od tranny in a car you might want to take on the highway.

Build A BIG BLOCK FOR FUN AND WEEK END DRIVING ! #1 gas $ saved during the week will pay for week end gas ! #2 Plus you will feel more acepted at car shows with the big block car and not past over buy most with a wimp small block in there . #3 I know small blocks can run but it does not mater to the masses perception and coolness is everything that is why you have a 68 b-body in the first place anyway right ?

OK, here's one............. Put a 4" MP cast stroker crank in that 318 and have more power than a low compression 400 w/o all the required big block parts to make it happen.

And that, is the beauty of it. Stealth hp & torque to tame those cocky big block guys. Top that lil' stroker with some ported Magnum heads, all on the low-$ side and it'll stun & amaze friends and aquaintances.
yeah dump all that money into a small block to equal the HP of a very mild BB build. makes sense. Do it for the 400 and you'll make twice the motor at the same price.. 408 318 small block vs. 512 400 BB.

Twice the motor???? A 4" stroked 318 is a 394 or at best 396, not 408. 394 X 2 = 718!! NOT 512. Lets keep it real folks.

just run TWICE AS GOOD. a 318 2bbl in a B-body is as impressive as a super model w/ fakies. Do me a favor build a 394 storker for your b-body and let me build a 512 on the same budget. I'll spot you 3 lights. If the OP just wants a nice car that sounds good and drives nice by all means do the 318...if he wants ANY performance go big or go home.

Ya does small block strokers are terds. At this point the small block stroker would be much cheaper build for a mild performance engine he has everything he nneds to run a small block. and get some nice heads cheap to make the stroker scream. The amount of money in heads alone for a 512 would put it way over in cost for a street car
