Your attention to detail is an inspiration Barnabas! I ended up having a professional install my headliner and vinyl top. It's amazing to watch an expert install them while making it look so easy. No wrinkles at all. He said they will just look better once it sits out in the sun for a few hours too.
We found that the Ledgendary Interior replacement sail panels are simply too flat and once they're pushed into position, which is a curved shape, the fabric gets wrinkled and looks bad. The velcro fastening system leaves a lot to be desired too.
My molded originals have a bit of lumpiness on the face where the material glues on. I guess it's caused from moisture and slight deterioration over the years. I lightly sanded them to knock off the loose parts, and my upholsterer is glueing a very thin veneer of foam on them to smooth them out prior to glueing on the headliner material and installing them.
Overall, the Ledgendary Interiors headliner, vinyl top and seat covers look outstanding!

After a long delay, here are some new pictures. I have been working on the car every week, but a lot of the progress was not so visible. A lot of parts were custom machined for the engine installation, EFI, brakes, etc, small hardware and parts were cleaned and painted, and so on.
I was mainly working on the engine (tear down, and reassemble with upgraded parts) and on the rear disc brake setup (all custom built).
The firts pic is the brand new crate hemi stripped down to a bare short block, new cam and roller timing set installed and degreed.

Assembled long block. Still need to add the EFI parts, alternator, motor mounts, etc. I'll be getting the parts back from the anodizing shop on Monday, then I can finish installing the accessories.

On the rear brakes, my original plan was to use the 74 Imperial rear disc setup. I used this setup on another car in the past with excellent results.
However I wanted to upgrade the calipers from the ugly stock cast iron to something a little more modern... Well, after a few mock-ups one thing led to another... I ended up almost custom making the whole rear brake setup. The reason was that there was nothing in the aftermarket that met all my criteria: (1) Parking brake in rotor hat (2) Lightweight aluminum calipers (3) Retains stock adjustable wheel bearings (4) Appearance that would match the front setup which is Viper calipers on 13" rotors.
Finally this is what I came up with: Chrysler LX rotors (12.6"), SRT-8 rear calipers, custom mounting brackets, custom axles, stock 74 Imperial parking brake setup which uses small brake shoes inside the rotor hats.

Brake shields. I used the 74 Imperial pieces, but they had to be cut and re-welded, (1) for a different offset and (2) one flipped as the Imperial uses the same parts on both sides, with one caliper mounted toward the front, one mounted toward the rear. While this works fine it looks odd. I wanted both calipers mouted toward the front.
