So if my oil pressure at hot idle is 31 psi and 63 psi at cruise should I try using the 10w30 or 10w40?

If I use a thinner oil I may have to keep the high pressure pump since my cruise pressure is 63 Psi. Changing the spring in the pump shouldn't change the idle pressure.

There is really nothing wrong with your oil pressure now.

If you go with lighter oil, your cruise will probably stay the same, but pressure at idle will go down.

I was trying to get some more life out of the bronze gear. I figured the thinner oil and standard pressure would help. If I am in the ball park now, what is the best thing for me to do?

I'd go with the next lighter grade of oil & call it good. With a new intergear you're ready to continue tearing up the streets up there
