I would say 1/16th -.100" clearance would be plenty! Judging by your pictures I'd say it's do-able. When I made my brackets for my Viper calipers I had to move things around slightly to make it all fit with my rims. I wouldn't be afraid to clear/machine the calipers slightly on the ends to make it work.
Don't give up your almost there!

Do I wanna mill the rotors every time I get a new set?

I have to with my setup (360mm Mercedes rotor) to get the bolt pattern changed, but it's not a big deal to me really. Not swapping rotors every week or anything like that. (and you could always machine up an extra pair to have on the shelf "just in case"

Unfortunately, the new Year One 17" wheels do not have much caliper clearance.

I recently had a meeting with the company who is making the wheels for Y1, and had brought up about brake size...and they pretty much said they "would fit bigger brakes" but they had never really designed them with any particular setup in mind.

(Also asked about why no 18" or other widths than 8" or 9" in the various cast wheels they do. )

(The Pontiac rally II they do is a good seller in Oz and I ship a bunch over..)

Very cool, i wish they made them in 17x10 or even a 9 with a more negative offset . its soooo close, I may just have to go pick up some spacers and try. I've always wondered what's the minimum amount one needs for clearance inside the rim?
Right now I need free time more than anything...

I have decent but not huge clearance on my setup, would have to measure how much, but while not a giant amount I can't see the wheel flexing enough to have contact against the caliper. My wheels were made for extra brake clearance though so works out well..
