I don't think your temperature (which you don't say HOW hot) is Carb related. I too ran a 750 VS Holley on a 440, with the 474/474 280 MP cam, stock jetting, headers, ran fine! (I did play with the secondary springs but that was it)

If your tubes are glowing after fast idle while the hood is up...SO do mine! And this is on a 440 850 Holley DP that is overjetted (84's , 80's are stock)
