But with 355 gears & a 4bbl.... shouldn't I be able to do a bit better than 7mpg? The car doesn't get driven much so it's not so much the cost of filling up but the lack of range I will get with the car.

I just filled the car up from empty (engine quite). It took 17.2 gallons. That's up to the filler neck.
