When does it heat up, idling, when your moving or when you get on it? In simple terms, if it heats up when idling but cools down when moving, it's usually an air flow/water flow at low speed problem. If heats up while driving it could be the rad is too small or there is an obstruction in the rad/water jackets.

Make sure all of your hood seals/stone shield are in place. Believe it or not when these things go missing it messes up the air flow through the rad. Use a fan shroud and possibly a solid fan (no clutch or flex fan). Use a high volume pump and a thermostat no hotter than 180 degrees. Don't use underdrive fan pulleys. Make sure you don't have a lean condition and that the timing is set correctly. No more than a 50-50 mix of antifreeze.
