15 or 20 years ago I installed some shark bites on 3/4-in copper in my basement ceiling while doing an alteration. One of them came apart in the middle of the night about a month after it was in use. It flooded our finished basement and caused extensive damage. I will never use one again. In my opinion a safer option in your circumstance would be to use a brass compression fitting union. They will never come apart. You can get all of your soldering done downstream while it is dry, then make the final connection into the drippy pipe with the compression union.
