Trying to cover a metal wall with wood is going to be problematic. The profile of the metal prevents you from getting the wood fastened securely. I'd pull the old metal off and re-metal. As for the roof, Trying to use furring strips over old metal will be an exercise in futility due, again, to the profile of the metal. If the base structure is sound, strip the old metal off and install new metal here also. Just my twocents
