O2 sensors are a much better tool for tuning.
The best thing you can do is never again talk to the person who told you "sensors don't like methanol". the only time i had any issues is tuning blown methanol because my sensors won't go below 4.4, with a carb you should be nowhere close to 4.4.

FYI on the dyno i can use both 8 EGT's and up to 10 O2's and i can not remember the last time i hooked up the EGT's
