just to update, I'm now thinking I'm going to have to re-drill the axles and brake rotor's to a 5x5.5" bolt pattern.

I briefly looked at the billet adapters (I have no experience with adapters and always thought they were dangerous).

If I use adapters, it'll push the wheels out 1.25" which won't alleviate the problem of wide wheels eating up wheel bearings.
