Your truck should run right at 200* or slightly less. It has a 190* thermostat unless it has been changed. Anything above that temp you should hear the cooling fan roaring and should cool down instantly. The electronic cooling fan clutch is sometimes problematic on those models. I would first check for excessive debris in the core of the radiator and for broken wires to the fan clutch.
