Use mini-starters if you don't have them already especially with headers. Makes a world of difference plus today's gas does effect hot restarts too.
1970 FE5 Duster 360/904/3.91's SOLD
1973 TB3 SpaceDuster 340/4spd/4.10's SOLD
Moparless for now but when the opportunity is right I'll have another one.

I sounds like you are having issues with the fuel boiling/evaporating out of the carburator. An electric fuel pump, insulating the carb with a phenolic baseplate and rerouting your fuel line away from direct heat soak could help.
1970 Plymouth 'Cuda #'s 440-6(block in storage)currently 493" 6 pack, Shaker, 5 speed Passon, 4.10's 1968 Plymouth Barracuda Convertible 408 Magnum EFI with 4 speed automatic overdrive, 3800 stall lock-up converter and 4.30's (closest thing to an automatic 5 speed going)

Same issue here. I am going to install a small electric pump to prime the system. Last summer I put about a half inch of gas in an old spray paint cap and left it on the bench next day it was gone, and I mean bone dry in less than 24 hours. It evaporated that quick.

I just can't figure why the 383 was starting so good for it to stop doing it.
I missed that, it started acting up out of the clear blue sky w no changes on your part & (so far) no obvious cause? EDIT just thinking out loud, wondering if it is ign related & not fuel, check spark quality at a plug & reluctor gap/pickup continuity anything in that area
